(Tiger Shrimp in Ginger) Since its so easy to make and so tasty to eat I thought I would give it a French name that’s harder to say! Okay . . . how does food fit on MY blog . . . how about this for a segue (I know its a stretch). Jesus said, "I say to you, do not be worried about your life, as to what you will eat or what you will drink; nor for your body, as to what you will put on. Is not life more than food . . . ? Matthew 6:25" Don't worry about what you are going to eat . . . but since we are going to eat, why not eat good! Planning a good meal can cut down on anxiety! And its quick and easy! So if you want the short cut version stop into Costco some time, and pick up one of the small baby greens salads with spinach. We used ours for five days gleaning a little of this for a little of that through the week. But concerning the recipe at hand, you will want some of the bacon bits and a small handful of the greens.
Mike May is someone Angela my wife knows. For years Angela has been working with visually impaired people of all ages. Currently she is reading, “Crashing Through,” a book by Robert Kurson about Mike. Mike is one of a handful of people who where either born blind or spent most of their lives without sight and became sighted at an adult age. His journey is courageous, inspiring and perhaps you might say miraculous.
